Pastis 51 Anisée comes from Marseille and has been an favourite for years with its powerful aromas of star anise and liquorice combined with spicy flavours and gentle sweetness. The origin of this style of traditional spirit is also found in France, as Pastis is widespread in the South East.

While Pernod is made by distillation, pastis is mixed in cold conditions

The production of Pastis 51, in contrast to others of its kind, does not proceed by distillation. Pastis 51 is mixed cold, allowing the ingredients to unfold their unique aromas. With an alcohol content of 45% abv, pastis is much more powerful than other varieties and has a stronger taste.

The 51 stands for the founding year and describes the optimal mixing ratio

The name for Pastis 51 goes back to the founding year of the spirits 1951. However, many interpret it as an indication of the ideal mixing ratio, which provides five parts of water to one part of pastis. The title "Pastis de Marseille" on the lower half of the bottle refers not only to Marseille, but also to a special type of pastis with its own characteristics. Here, it refers to the alcohol content of 2 grams per litre as well as the alcohol volume of 45%, which clearly differentiates the Pastis 51 from other varieties.

Pastis 51 changes its appearance when you add ice water

Traditionally pastis is drunk with (ice) water in a ratio of 5: 1. The dilution of the spirits ensures that the previously dissolved essential oils become insoluble and the amber liquid changes into an opalescent, milky, white liquid. However, do not use ice cubes, otherwise an oil film will form on the surface.
